Add tomatoes, turmeric and coriander-cumin powder and cook till the mixture leaves oil.Baingan Ka BhartaIngredients1 large (750 gm) brinjal, 1/2 tsp oil for greasing, 1 tbsp ghee, 1 tsp cumin seeds, 1/2 cup sliced onions, 1tsp grated ginger, 1 tsp grated garlic, 1 tsp finely chopped green chillies, 1/2 cup finely chopped tomatoes, 1/2 tsp turmeric powder, 1 tbsp coriander-cumin powder, 1/2 tsp garam masala, salt to taste, 2 tbsp chopped coriander for the garnishMethodGrease the brinjal with oil and roast it over an open flame till it is cooked. Cool and peel the skin; mash the pulp thoroughly and keep aside. When they crackle, add onions and sauté till they turn golden brown. Mix well and cook for three to four minutes.
